Crock Pot Barbecue Chicken Ingredients

3 8 oz. cans tomato sauce

1/2 C. apple sauce

1/4 C. brown sugar

1 Tbs. garlic (crushed or pureed)

1/2 C. chopped dried onion (or 1 medium onion, diced)

1/4 tsp. black pepper

1 Tbs. salt

1/2 Tbs. cider vinegar

1/2 tsp. cumin

1/2 tsp. paprika

2 Tbs. molasses

1/4 tsp. liquid smoke*

* Liquid smoke is a natural product created by distilling real hardwood smoke (usually hickory)

Step 1: Make the Sauce

Just dump all the sauce ingredients in the crock pot and mix. If you don't have some of the ingredients, that's OK. If you have the tomato sauce, sugar, and salt, it will be OK.

Add your chicken (about 2 lbs.). It doesn't matter what part of the chicken it is, if it is thawed or frozen. Boneless, skinless chicken is preferred (because otherwise you would have to remove the skin and bones as you eat it). Frozen chicken will take an hour or so longer, but that's not much compared to the total cooking time.

Step 2: Set It

Set your crock pot to low if you have about 8 hours, or to high if you only have 4-5 hours. The meat will be a little more tender if you use low, but with this much cooking, it will be plenty good either way.

After a couple hours, your barbecue chicken will look like this. It's not even close to done yet, but if you stir it at this point, the meat will absorb more of the yummy barbecue flavor.

Step 3: Forget It! (I dare you)

You may want to leave the house, as the smell may drive you crazy while you wait :-). When your crock pot barbecur chicken is done, it will look something like the picture on the right. The chicken must be completely opaque and should be easy to tear into pieces. If you continue to cook for another couple of hours, it will begin to fall apart just by stirring the pot.

If you like your barbecue sauce chunky, skip the next step and go directly to Step 5: Eat!

If not, remove the meat from the pot and set it on a plate. Cover it with aluminum foil while you proceed with the next step.

Step 4: Smoothing Out The Sauce

After removing the chicken, use an immersion (hand) blender to smooth out the sauce. Be careful here because the sauce is hot and isn't very deep, so it can easily splatter if you tip the blender or leave it on very long. Many short pulses while "stirring" with the blender will prevent it from splattering all over you.

You can either put the chicken back into the crock pot now and serve it directly from there, or take the sauce out and put it in some kind of serving dish, like a gravy boat.

Step 5: Eat!

Serve it up and enjoy! This time I've paired it with Broccoli, Cheesy Potatoes, and Jamaican Rice, but my kids love it with mashed potatoes too. At first I thought that BBQ potatoes would be terrible, but it's really tasty. It's now a family favorite. On the next page, take a short game to see what you've learned.
