Uncle Rob's Spaetzle With Onions And Cheese
Description: Spaetzle is a pasta-like dumpling from Germany, Austria, and Switzerland. This Spaetzle has cheese and fried onions added. It is one of my kids favorite meals, and one of mine too. It is also vegetarian. My brother Rob lived in Switzerland for two years and came home with a recipe for spaetzle along with a special machine to help make it. It quickly became a family favorite. I don't have any special equipment, and the recipe I got from him consisted of "1 egg and a little salt per cup of flour," "lots of butter," and "gruyere and emmentaler cheese." I came up with exact amounts and replaced the butter with olive oil (healthier). I suspect that he likes it with butter, more onions and more cheese.
